Homemade (hand-whipped) cream

Fresh cream you whip by hand or with a mixer tastes great, but it does not last long. It is best used within 1 to 2 days. After that it slowly goes soft and watery, even in the fridge. Most home cooks find it keeps about 3 to 4 days before it is past its best.

This happens because hand-whipped cream is full of tiny air bubbles. Over time those bubbles collapse, the cream loses its fluffiness, and water drains out. It is still the same cream, it just does not hold its shape.

Cream made in a cream whipper

This is where a cream whipper (dispenser) really earns its place. Instead of beating air into the cream, a whipper uses food-grade nitrous oxide (N2O) from a cream charger. The gas dissolves into the cream under pressure, and the whipper stays sealed.

Because the whipper is sealed, no air gets in and the gas stays put. The whipper maker iSi says cream “will keep in the fridge for up to 10 days” inside the whipper, with no added preservatives. The main rules are simple: keep the whole whipper in the fridge, and do not take the head off, because that lets the gas out and air in.

Shop-bought cream (squirty and tubs)

Shop-bought whipped cream is made to last longer than homemade, but you still need to check the pack.

  • Squirty cream (aerosol cans). Keep the can in the fridge, not the door, and use it by the use-by date printed on the can. The dates vary by brand, so the pack is your best guide.
  • Tubs of whipped topping. Follow the use-by date. Once opened, keep it sealed in the fridge and use it within a few days, or by the use-by date if that comes first.

Always use a clean spoon, and never leave a tub open on the side.

Stabilised whipped cream

If you want homemade cream to hold its shape for longer, you can stabilise it. A stabiliser helps the cream keep its structure so it does not weep as fast. This is handy for piped decorations and cakes made a day ahead.

How to store whipped cream

Good storage is what makes cream last. UK food-safety guidance is clear on the basics:

  • Keep the fridge at 0°C to 5°C. Food Standards advice is to keep your fridge in this range and check it with a thermometer.
  • Cover it. Store homemade cream in an airtight container so it does not pick up fridge smells or dry out. A sealed whipper does this job for you.
  • Do not leave it out. Do not leave cream at room temperature for longer than 1 to 2 hours. At a party or buffet, 4 hours is the most it should be out, then throw away what is left.
  • Store at the back, not the door. The back of the fridge is coldest. The door is the warmest spot.

Can you freeze whipped cream?

Yes. Freezing is a good way to save spare whipped cream. The easiest method is to spoon small mounds onto a tray lined with baking paper, freeze them until solid, then move them to a freezer bag or box.

Frozen whipped cream keeps for about 1 to 3 months. Oetker says homemade whipped cream freezes for up to 3 months. Thaw the mounds in the fridge, not on the counter. The texture may be a little softer after thawing, so frozen cream is best dropped straight onto hot chocolate, desserts or coffee.

Why does whipped cream go watery?

Whipped cream is really just cream with air (or gas) trapped inside it. Over time that structure breaks down. The bubbles collapse, the fat can no longer hold the water, and liquid drains to the bottom. This is called weeping.

Warm cream weeps faster, which is why cold storage matters so much. Cream made in a sealed whipper weeps far more slowly, because the gas stays trapped and no air gets in. That is the main reason whipper cream lasts so much longer than hand-whipped.

Signs it has gone off

Throw whipped cream away if you see or smell any of these:

  • A sour or off smell
  • Watery liquid pooling, or the cream splitting into curds
  • A yellow or off colour, or a slimy feel
  • Any mould, including around the nozzle of a squirty can

If in doubt, do not taste it. Throw it out.

How to make whipped cream last longer

  • Start cold. Use cream straight from the fridge, and chill the bowl too. Cold cream whips firmer and lasts better.
  • Use the right cream. In the UK, whipping cream (about 36% fat) and double cream (48% fat) both whip well. Single cream (under 30% fat) will not whip. Higher-fat cream holds its shape longer.
  • Do not over-whip. Stop at soft or stiff peaks. Whip too far and the cream turns grainy and splits.
  • Stabilise it if you need it to hold for a day or more (see above).
