What you need before you start

You only need three things:

  • A cream whipper (dispenser). Common sizes are 0.25L, 0.5L and 1L. We stock a 250ml cream whipper for home use and a 1L cream whipper for cafés and busy kitchens.
  • 8g cream chargers. These are small steel cartridges filled with food-grade nitrous oxide (N2O). See our 8g cream chargers.
  • Cold cream. Fresh double or whipping cream straight from the fridge works best.

That is it. No electric mixer and no whisking by hand.

How a cream charger works

A cream charger is a small steel cartridge filled with nitrous oxide, a food-grade gas. When you screw the charger into the whipper, the gas is released into the cream under pressure.

Here is the simple version. Under pressure, the gas dissolves into the fat in the cream. When you press the lever, the pressure drops, the gas expands, and the cream comes out light and whipped. It is the same idea as a fizzy drink, but the gas does the whisking for you.

One thing to know early. Cream chargers use nitrous oxide (N2O), not carbon dioxide (CO2). The whipper maker iSi says N2O is for “cream, espuma and mousse,” while CO2 is for “carbonated sodas, drinks.” So a cream charger will not make your cream fizzy. How to use a cream charger, step by step

Follow these six steps.

1. Chill your cream. Use cream straight from the fridge. Cold cream whips far better than warm cream.

2. Pour the cream in. Fill the whipper to the maximum fill line, and no higher. iSi says the empty space above the cream is needed for good whipping, so do not overfill. You can add a little icing sugar or vanilla now if you want sweet cream.

3. Screw on the head. Make sure the rubber seal (the gasket) is sitting in place first. Then screw the head onto the bottle firmly so it is airtight.

4. Add the charger. Drop an 8g charger into the charger holder, open end facing the whipper. Screw the holder onto the valve. You will hear a hiss as the gas goes in. That hiss means it worked.

5. Shake it. Take the charger holder off. Then shake the whipper. iSi advises a vigorous shake “at least 6 times.” Use your first squirt to check the cream. If it is still runny, shake one more time.

6. Dispense. Hold the whipper fully upside down, with the nozzle pointing down. iSi says to always dispense “head down.” Press the lever gently and the whipped cream comes out ready to use.

That is the whole process. Once you are set up, a fresh batch of whipped cream takes under a minute.

Which cream to use

The cream matters more than anything else. If your cream is too thin or too warm, it will come out as liquid.

Use cream with the right fat level. iSi says, “The best results come from cream with 30 to 36% fat.” In the UK that means double cream or whipping cream. Single cream does not have enough fat and will not hold its shape.

A few more cream tips from iSi:

  • If you use UHT (long-life) cream, keep it in the fridge for 24 hours before you whip it.
  • Pre-chill the whipper itself in the fridge for a few minutes for the best texture.

How many chargers per whipper size

A common question is how many chargers to use. The answer depends on the size of your whipper. Here is the official iSi guidance.

Each charger holds 8g of gas and is used once. After it hisses and empties, it is spent. You cannot refill it or use it again. So “how many times can you use a cream charger” has a simple answer: once.

How long does the whipped cream last?

This is one of the best things about a whipper. You can make cream ahead and keep it.

iSi says cream “will keep in the fridge for up to 10 days” inside the whipper, with no added preservatives. There are a few rules to get that:

  • Keep the whole whipper in the fridge, not on the counter.
  • Do not take the head off. If you open it, the gas escapes and air gets in.
  • Start with fresh, cold cream and a clean whipper.

For a café or bakery, that means you can charge a whipper in the morning and serve from it all through service.

Tips for better results

  • Keep the cream cold at every step. Warm cream is the most common reason cream comes out runny.
  • Do not overfill. Stop at the fill line so the gas has room to work.
  • Shake, but do not overdo it. iSi says once the cream is the right texture, stop shaking. “Repeated shaking isn’t necessary and will reduce the yield,” so you get less cream out.
  • Add sugar as icing sugar. It blends in smoothly and will not clog the nozzle the way granulated sugar can.
  • Hot recipes need the right whipper. Only use hot mixtures in a whipper made for hot use. iSi says to keep its Gourmet Whip warm in a bain-marie at no more than 165°F (about 74°C). Never heat a standard cream whipper.

How to clean your cream whipper

Clean the whipper after every use so it stays fresh and the nozzle does not block.

  1. Release the gas first. Point the nozzle into the sink and press the lever until all the cream is out and the whipper is no longer under pressure. iSi is clear that it must be “fully emptied and de-pressurised” before you open it. Never unscrew the head while it still holds gas.
  2. Take it apart. Unscrew the head. Remove the nozzle, the rubber gasket and the charger holder.
  3. Wash the parts. Use warm, soapy water and a soft sponge or cloth. Clean inside the nozzle and valve with a small brush. Do not use harsh scourers or strong chemical cleaners on the seals.
  4. Rinse and dry. Rinse everything and let it air dry before you put it back together.

Staying safe and the law

Cream chargers are legal to buy and use for food in the UK. Nitrous oxide is an approved food additive, listed as E942 on the Food Standards Agency’s list. The government also names catering, “as a whipped cream propellant,” as a legitimate use of the gas.

A few safety points:

  • Never inhale nitrous oxide. It is dangerous. Since 8 November 2023, it has been a Class C drug in the UK if you have it and intend to inhale it. Chargers are sold for food use only, to adults aged 18 or over.
  • Store chargers safely. Keep them in a cool, dry place, away from heat and direct sunlight.
