What Is SmartWhip Used For

Quick answer: SmartWhip is a large cylinder of food-grade nitrous oxide (N2O) used to charge cream whippers. Chefs, bakers and bartenders use it to make whipped cream, sweet and savoury foams, mousses, sauces and fast flavour infusions. One 640g cylinder holds roughly the same gas as 80 standard 8g cream chargers, and a pressure regulator lets you set exactly how much gas goes into each whipper.

1. Whipped cream

This is the main use. N2O dissolves into the cream under pressure. When you press the lever, the gas expands and the cream comes out light and whipped in seconds. A sealed whipper also lets you make cream ahead and serve it through a busy shift.

2. Sweet foams

Chefs turn fruit purées, chocolate or coconut mixtures into light foams for desserts. Many recipes need a little gelatine or another stabiliser to hold their shape. SmartWhip publishes a vegan coconut foam recipe as one example.

3. Savoury foams (espumas)

An espuma is a light foam made from a flavoured liquid, such as cheese, potato or a seafood bisque. Restaurants use them to add flavour and texture to a plate without adding weight.

4. Mousses

A whipper can aerate a mousse base in seconds, with no folding or long whisking. You also get the same texture every time, which helps when you’re plating in volume.

5. Sauces and soups

Whipper maker iSi says its Gourmet Whip can make “warm and cold sauces, soups, espumas and desserts”. Only use hot mixtures in a whipper that’s made for hot use, and follow its temperature limits.

6. Fast infusions

Pressure from N2O pushes flavour from herbs, fruit or spices into a liquid. iSi says this can cut infusions that “used to take days or even weeks” down to “a fraction of the time”. 7. Drinks and cocktails

Bartenders use SmartWhip for foam toppings on cocktails and mocktails, and coffee shops use it for cream and cold foam. It adds texture on top of a drink. It doesn’t make the drink fizzy (see “What SmartWhip is not used for” below).

Why chefs use SmartWhip: control over texture

This is the part most guides miss. With 8g chargers, you add gas one full charger at a time. SmartWhip connects through a pressure regulator, so you can set the pressure yourself.

SmartWhip says chefs and bartenders use it “to get exact amounts of pressure for achieving the desired texture and intensity” of anything that comes out of a cream dispenser. It also talks about “the relation between foam density and pressure”.

In practice, that means:

  • Lower pressure for softer, lighter foams
  • Higher pressure for firmer foams and thicker mixtures
  • The same setting every time, so a dish comes out the same on every shift

Make small changes and test as you go. Always stay within the limits of your whipper and regulator.

What was SmartWhip made for?

SmartWhip says it was the first company to market a large disposable cylinder filled with nitrous oxide. It was made so that kitchens and bars could charge cream dispensers from one large cylinder, with controlled pressure, instead of opening box after box of small 8g chargers.

How much gas does each whipper need?

iSi advises 1 charger for a 0.25L or 0.5L whipper, and 2 chargers for a 1L whipper. A standard charger holds 8g of N2O. Here’s what that means for one 640g SmartWhip:

These are estimates based on gas weight. With a regulator you may use more or less, depending on the pressure you set and your recipe.

SmartWhip says its regulator comes with the custom adapter, and has a pressure relief valve. Always follow the instructions for each part and check every connection before you open the valve.

What SmartWhip is not used for

  • Fizzy drinks. SmartWhip contains N2O, not CO2. iSi says N2O chargers are for “cream, espuma and mousse”, while CO2 is for “carbonated sodas, drinks”. Don’t use SmartWhip in a soda siphon.
  • Cars. Car nitrous kits are a separate automotive product. SmartWhip is food-grade N2O sold for kitchen use.
  • Inhaling. It’s dangerous, and since 8 November 2023 it’s illegal to have nitrous oxide if you intend to inhale it. See Is SmartWhip legal in the UK?
  • Whipping on its own. The cylinder only supplies gas. You still need a regulator, hose, adapter and cream whipper.

Tips for better results

  • Pick the right cream. iSi says the best results come from cream with 30 to 36% fat. Check the label.
  • Keep it cold. iSi advises chilling UHT cream in the fridge for 24 hours before use.
  • Don’t overfill. Stop at the maximum fill line on your whipper.
  • Shake, but not too much. iSi’s Gourmet Whip guide says to shake “at least 6 times”. Shaking a lot more after that can reduce what you get out.
  • Hot recipes need the right whipper. iSi says to keep its Gourmet Whip warm in a bain-marie at no more than 165°F (about 74°C).
  • Store cylinders safely. Keep them upright in a cool, dry place, away from heat and direct sunlight. When empty, see how to dispose of N2O canisters safely.

Is SmartWhip legal to use in the UK?

Yes, for food and drink. The government lists catering, “as a whipped cream propellant”, as a legitimate use of nitrous oxide. The gas is also an approved food additive, E942, on the Food Standards Agency’s list.
